elbows - you didn't close the second tag. They're not "stored" anywhere - you just have to type them in.

If you add the tags around the text manually, exactly like it appears here, you'll get what displays below.

You can even do different colors for text and strikethrough
though it doesn't work in all browsers, apparently

Although that does run into the issue of properly contrasting colors.
