Woo Hoo! It's time again for the annual Waikiki Spam Jam!

It didn't start until after we left Hawaii so many years ago, so I'm psyched. And it's right here in my own backyard of Waikiki. I think I'll order me some spam spam spam spam spam spam spam beaked beans spam spam spam and spam, only with spam instead of the baked beans.

I have never eaten Spam.

I have no problem with the concept of "spiced ham," and I've even bought it occasionally freshly sliced as a cold cut, at a deli counter. But ham in a can worries me.

I eat tuna and sardines and other seafood out of cans, but never anything like corned beef hash. Or Spam.

I've had spam musubi. It's not bad. I don't recall having eaten spam otherwise.

Spam is the state dish! Introduced I think during WWII. Spamburgers are quite common. I loves me some spam. But you have to cook it. I can't imagine eating it straight out of the can.

We often had spam when I was a youngster in the early 60s. My mom was a Depression era/WWII veteran who grew up in New England, so was not used to eating real food (or if there was real food it was boiled until tasteless). Spam was just one of the many artificial food-like substances we ate as kids. Right up there with the Velveeta cheese!

I know. I first heard about Spam in From Here to Eternity (the novel) as part of the famous "You WILL prepare hot food for the men on patrol even though it's three in the morning" scene. They got grilled Spam and cheese sandwiches, possibly as retribution from the sleepy cook.

I guess if you got stationed at Pearl Harbor, you learned to enjoy Spam.

Do they serve a Lobster Thermidor à Crevette with a mornay sauce served in a Provençale manner with shallots and aubergines garnished with truffle pâté, brandy and with a fried egg on top and spam? If so, I'm all in.


(Spam, btw, is good eats on a camping trip. Fries up nice in the pan, but you don't have to worry about how hot you got it...)

I did not until I was about 35 years old. My Mother, born in 1947, remembered it at the very end of WWII rationing in England. I think her mother taught her it was subpar food. That is how I viewed it as a kid.

Anyway, we enjoy it now. My kids like to have it diced up into squares. We mix it with rice and seaweed.

I recommend Aldi brand SPAM, by the way. Equally as good as regular SPAM and a lot less expensive.

Indeed it is. Once again I'll mention dad's SPAM® salad sandwiches. Grind the SPAM®, mix in Miracle Whip (I'll explain) and sweet pickle relish, chill, serve on soft white bread. I'm not a Spam addict, but I do have several tins of chorizo Spam on hand. I like Spam. Potted meats were a staple of my parents Polish pantry, so I grew up on that kind of stuff (in addition to real homemade deli products sold at the local Eastern European groceries.) It's all good to me!

I haven't found the chorizo Spam and I've made an effort having searched all my usual stores. At this point, it can't possibly live up to the.. well, hype seems too strong but maybe just expectations?

It's decent. I personally don't think it tastes that much like chorizo, but more like maybe Hormel hot tamale filling, but my brother does think it tastes similar to chorizo. Anyhow, I like it better than regular Spam for frying up, as well as eating with eggs. If enjoying cold, though, I prefer regular Spam. If you ever end up near Midway Airport area, the Pete's Market on 43rd and Pulaski has it.

It wins it's place in the breakfast rotation for being there. If I want ham or bacon or sausage I have to make sure I pick some up at the store. If I want Spam and eggs all I have to make sure of is the eggs. I know I have Spam. Diced or fried (or both) it's part of Your Good Breakfast. Same with being an ingredient in the bean-based Bachelor One-Pot "Don't You Dare Make A Mess of The Kitchen While I'm Away" dinner. :D

That's how I grew up eating this kind of stuff. I didn't discover it fried until maybe my 20s. And, minus the chorizo Spam, it's the way I usually eat it.

Really, the only (bad) thing about Spam is that it gives me rather persistent flatulence. Persistent as in really good hang time. But that may be due to the beans.

The festival was still going on when I left to go stop by the Honolulu Tavern, a venerable old dive bar here in Waikiki. A group of drinkers were just about to wander over to see the the festival. I told them I'd just come from there, and this Canadian lady, a tourist, asked me, "Do they have anything vegetarian over there?" :smack:

I just looked at her and said, "Yeah, Spam."

Similar, but maybe a little less firm? I'm not sure if that's the right word. I mean It's not really foldable or rollable the way deli spiced ham is. It's more likely to break apart if you try to do that. Or at least it seems that way. Flavorwise, they're all in the same ballpark. Spam definitely has its signature flavor, though, and Armour Treet just doesn't cut it.

The only thing wrong with spam is that it's too salty. But if you're mixing it in with other things to cut the salt, or if you're working out a lot and sweating, it's fine.

My grad school roomie was from Austin, MN, the hometown of SPAM. He described the local "SPAM Days" they had every year. He spoke about it like it was something he survived, rather than enjoyed. He said to imagine any recipe you've ever heard of and replace the title ingredient with SPAM. ANY. RECIPE. EVER.

It's amazing the number of products they have in the shop section of the website, including a SPAM can costume.

I went to the original SPAM museum when it was at the factory, it has since moved. There was a restaurant across the street that specialized in SPAM, but it was for sale. I wonder if they got it sold?

Here's a CBS Sunday Morning feature on SPAM.

14 different flavors of SPAM on the shelves of a Hawaiian grocery store, and they have an interview with Todd Rundgren and his wife Michele about their Tiki bar on Kauai that features SPAM on the menu. Todd explains that despite it's reputation that it's much better than hot dogs "It doesn't have any snouts or anuses in it."

It's got a pretty high fat content, too. And not the "good" kind of fat.

But, can it be any worse than a hot dog? If you eat hot dogs, but turn your nose up a spam, you might want to think about that dog a little bit more carefully.

Best SPAMwich recipe ever. It tastes like childhood and nostalgia, before I understood that we were poor. My kids, now 17 and 15, knew about e-mail spam before they knew about the food SPAM and they still ask for them for Saturday lunch on occassion.

My spam musubi technique:
--fry the spam: chuck it in teriyaki or in shoyu/mirin while still hot
--a bit of umeboshi/ ume paste on the rice, and furikake in it.
--et cetera as usual.

Original Spam

Margarine, butter (it was on sale that week,) or Mayo (grabbed a bunch of packets at the last fast food place we ate at.)
Potato chips (store brand)
OPTIONAL: No-name canned chili-dog sauce
Remove SPAM from can and slice thin; fry with a little margarine, butter, or mayo.
Assemble SPAMwich: bread, cheese(ish substance), SPAM, cheese(ish substance), and bread. If you want to show off to the Hoi Polloi, you add another layer of SPAM and cheese(ish substance). Fry that mutha in SPAM grease and the fat of choice until golden brown.
Serve on plastic or paper plate. Add chips, and if you want to gourmet that, heat a can of chili sauce and dump it over the SPAMwich and chips
