Re: cutting boards. There is a common misunderstanding about this issue. What you should do is keep your *salad* board separate from other boards. You can cut vegetables on the same board as meat, as long as the vegetables are going to be cooked.

You should never eat anything raw that has been on a meat cutting board, because bacteria from meat actually live (permantently) in the cutting board, and this has been shown to be true of plastic boards as well as wood. That bacteria will then get into lettuce or other food that you eat raw and you can get sick from it.

This assumes that you always cook your meat and fish. People who choose to eat raw meat or fish are taking their chances anyway, but they'd still be well advised to cut their salad materials on a dedicated board.
