Ok, I'm going crazy trying to place this scene.

I believe it's a TV series. Live action, not animated.

The series was NOT sci-fi or fantasy, but something happened that required everyone on the show (all of the regular cast members anyway) to get into some sort of long-term life support/suspended animation capsules. Once everyone was in place, the last person (who I believe was the "bumbling" character of the show) trips on the power cord and everyone's capsules shut down. Presumably everyone will die because of this.

Did I imagine this scene? What was it from? Was it a finale or just a dream episode of some sort?

That would be the "Space" episode of NewsRadio. It was a sci-fi parody and Matthew (Andy Dick) performed the power cord trip you speak of.

Edit: Rather, it was a sci-fi parody episode of an otherwise non-sci-fi show.

In my mind I was remembering it as NewsRadio but my Google-Fu was weak and couldn't find the episode description anywhere.
