What is (was) for dinner tonight?

I decided to make a chicken casserole found on YouTube here.

Basically, it's a bed of white rice in a cooking dish, then 3 chicken breasts (seasoned with salt & pepper), then cream of celery soup with water and a packet of onion soup mixed in, then an onion cut into chunks and placed on top of the chicken. Then cook at about 325 for 2 hours.

I have to say my place is smelling absolutely awesome!

I have about 40 minutes left and really can't wait to try it.

So what did others have for dinner?

It's funny: I spent 3 months in Israel recently and really didn't care for the food.

There's a new Mediterranean place near work and I've been eating the beef shawarma there quite a bit.

Weird.

Refried black beans, hamburger, sour cream, shredded mexican cheese mix and taco sauce on large flour tortillas. The cheese and (of course) sour cream put on cold after the rest was heated.

Its too hot to cook, so: antipasto salad. Chunked peppers, tomatoes, salami, cheese (aged cheddar & fresh mozz), olives, and pickled carrots. All stirred together with a little oil & vinegar.

It's too hot here, too, and I couldn't even summon enough energy to fix a salad. I ate raisin bran.

Too hot to cook here too!

I had a big tomato from the farmer's market with cottage cheese and black pepper, some summer squash salad (chunks of zuchini, yellow squash and patti-pans, red onion, black olives and feta marinated in Tuscan dressing), and a Skinny Cow ice cream sandwich.

Company just left so I'm sick of cooking nice meals. My husband is having an arthritis flare-up and has no appetite. Soooo...

I ate some leftover chicken wings and broccoli.

My husband will probably have a leftover hamburger later this evening.

I gave our daughter baby oatmeal, green beans, and milk. She'd had cheese and peaches just 90 minutes earlier, because it's been a surreal day and her schedule is shot.

I just took it out of the oven and the chicken is fall apart greatness.

The onion chunks have a good snap to them when bitten.

It could have used way more salt, so I salted it up while it's cooling, then mixed a bit.

In about 5 minutes, I'll be in heaven.

I gotta try that - do you think some mixed frozen veggies in there would work?

That was the greatest dinner I have ever had.

The chicken was way too undersalted, but everything else was over salted. How do I get the two to mix properly?

Not sure.

The flavors (other than the salt) really seemed made for each other.

The chicken literally fell apart on my fork, though it needed a bit more salt.

I'm feelin like it's a Tuna Helper night. Yeah. I'm that motivated. I'd check the box and tell you what version of Tuna Helper it'll be, but the dog is laying on the floor in front of the pantry so I can't get to it. And I don't want to wake him up. Cause he's a good dog and needs his beauty sleep.

ETA - Oops - I forgot - I'll have the Tuna Helper. The husband wants me to make stuffing for him. He cooked up a huge bunch of chicken giblets yesterday so he wants me to make him giblet stuffing. Fine with me, I don't have to eat it, just cook it. It can bake while my Tuna Helper simmers. Or I'll have a grilled cheese sandwich.

Yea, I'll probably have a grilled cheese. Screw Tuna Helper. Way to prep intensive for me.

I tried having the casserole from last night for lunch, but I'm finding it doesn't taste as good reheated (which is odd, casseroles usually, to me, taste better the next day).

Oh well, probably have steak tonight, maybe with asparagus and potato (mashed?).

I waited until really late so it was cooler, but I still sweated my face off. But it was worth it. I made my bacon chipotle mac-n-cheese. It's Alton Brown's Baked Macaroni and Cheese recipe, but I add cooked bacon and 3 minced chipotles. We absolutely love this at my house and it's one of the best things I've ever made.

I tossed a beef roast into the crockpot earlier, along with some onions, lots of garlic, potatoes, etc. Italian dressing went in on top. It smells wonderful!

It's winter here, and I made chicken, carrot, zucchini and pumpkin risotto in the pressure cooker. No leftovers, so I guess everyone enjoyed it.

I had a curry at tea time, Chicken Jal Frazei, and at two in the morning a Meatfeast pizza.

I'm working nights at the moment.

Have stopped drinking large amounts of very strong coffee now as it was giving me indigestion, have changed to large amounts of double bagger tea, which keeps me awake equally well, with no obvious side effects so far.


Plus tea is so much more civilised, you uncultured colonial barbarians !

I sliced up an onion and added it to my cast iron skillet with a bit of olive oil and kosher salt, then added two frozen potato hash brown patties.

I left it all to cook 10 minutes on each side at around 2 to 3, covered.

I then fried up some eggs and made multi grain toast that I heavily buttered.

I made a sandwich of the eggs, then enjoyed the onion/potato as a side dish.

It was so good that I may have it again today for lunch.

Last night, the Fella and I went here to celebrate his birthday http://www.castleheightschophouse.net/ . He had the prime rib and I had the Mongolian pork shanks. It was delicious.

This evening, it was back to family food: Sauteed chicken chunks with portabella mushrooms and onions over rice with a sprinkle of grated asiago, marinated summer squash and sliced tomatoes from the farmers' market (they're especially good this year) with cottage cheese. The boys all had a bowl of ice cream for dessert.

I joined Weight Watchers today. Then my husband suddenly got hungry and started asking what "we" were having for meals.

Dinner was a fakey-fake eggplant parmesan that I made up on the spot. Slices of eggplant sauteed with melted mozzarella and parmesan on top, eaten with spaghetti and tomato sauce.
