You betcha! I love me some Spam. Fried Spam and eggs was a standard breakfast for me since college days.

This strikes me as the canonical way to prepare canned meat product -- as a "salad", like tuna salad.

For those who have not had SPAM® salad sandwiches...

Grind one can of SPAM® in a meat grinder. Mix in Miracle Whip and sweet pickle relish. (Yes, it must be Miracle Whip.*) Chill. Serve on soft white bread (Wonder Bread).

As I've said before, my dad had to coax people to try it. Once they did, they asked for more.



*The reason it needs to be Miracle Whip is that it is sweet. This compliments the saltiness of the SPAM®. If you used mayonnaise, you would not have the sweet/savoury balance, and it would taste rather 'greasy'.

Oscar Mayer still has the ham and cheese loaf--saw it in the store today. But I discovered a new one that I picked up. Jalapeño Bologna! Also by Oscar Mayer. It's not bad but seems a bit wetter than your usual bologna. Doesn't have pickled jalapeños in it, but rather fresh ones.

All my local markets carry are the stupid chili-cheese Fritos...no BBQ in sight. So I make do with Scoops.

A quick check shows I am completely out of Underwoods! It's a must-have before Spring Training starts.

1 tsp lemon juice
cayenne pepper to taste

My grandmother apparently got this from a WWII recipe book, and it's been a staple in my family ever since.

I don't recall original SPAM being spiced. I understood that the acronym was for Shoulder Pork and hAM...no spice.

My mom would sometimes make sandwiches with Underwood's Deviled Ham and Deviled Chicken!
