Goddamn you 3am pancake cooker!
So I am sitting here awake in the middle of the night and slightly hungry and wishing I could sleep, I could pull something out of the freezer but it would be annoying to thaw and heat it.
When the smell of pancakes cooking comes in the window from somewhere.

you should have tracked the origin and knocked on the door carrying a plate, utensils and jar of syrup.

For future reference, pancakes freeze exceedingly well. When we cook pancakes, we cook a lot of pancakes, then freeze what we don't eat on cookie sheets (so they don't stick in a clump) and then transfer the frozen pancakes into gallon ziploc freezer bags.
Takes a stack of 3 about 60 seconds in the microwave from frozen. |

I was trying to convince myself to forget eating and just go back to sleep, bit like being on a diet and someone starts cooking a pizza.

They also defrost extremely well in the toaster. You don't leave them in long enough to get crisp.
I like my pancakes toasted the same way I toast bread - warm but not crispy. Drives my "toast it until it's black" husband insane. |

Last night just as I was heading to bed, one of the neighbours was baking an angel-food cake and the delicious smell kept me up. Who makes angel-food cake at 11 at night?? Somebody mean, that's who.
