Whatcha makin' for the Fourth?

Inspired by a thread here, I have some piri piri chicken marinating, getting ready for the grill. I love this stuff, and happily eat the leftovers cold.

A honkin' pan of sorta-shortcut-spanakopita, made with puff pastry. Spinach, parmesan, good olive oil, fresh lemon juice, cottage cheese, scallions, a titch of nutmeg...what's not to like? I also love this stuff and happily eat it cold.

A double batch of low-fat hummus, with plenty pita chips, sliced red peppers, broccoli spears and English cuke slices for dipping.

I'm an eccentric grazer, and obviously non-traditional.

What's in your fridge and plans?

BBQ ribs - pork and beef
Buffalo wings
homemade weisswurst
a box of some kind of veggieburgers
marinated very large stuffed portobellos, vegan to be baked instead of grilled=)
[stuffed with fresh parsley, basil, oregano, garlic, chopped portobello stems and some bread crumbs, and bound with olive oil=)]

hot bacon spinach salad, german style

potato salad

tossed salad of boston and romaine lettuces
assorted goodies to add to salad - chick peas, green peas, crumbled hard boiled egg, chopped onion, carrot shavings, broccoli and cauliflower florettes, croutons, chpped macadamia nuts and TVP crumbles, bacon bits, diced ham
choice of homemade vinaigrette, a sweet/sour poppyseed french, blue cheese, ranch and a bottle of some tomato/bacon dressing someone left in the fridge at new years still unopened.

a cheese and coldcut platter [am assuming that they will bring it, they always do=)]

store bought kaiser rolls, homemade rye, whole wheat and challa breads

a sort of red white and blue trifle [sponge cake, creme anglasie and strawberries and blueberries

a tiramisu [again will assume that since they have brought one every year for 4 years they will bring one yet again...]

chocolate chip cookies

coffee, tea[ice and hot] assorted juices, water...and anything anybody brings along

Pretty typical stuff

I'm getting together with my brothers and their families. We will have a potluck dinner, so I don't know exactly what we will eat. My mom is bringing the baked beans that we all like. I have made a gallon of ice cream. We will eat well, as my brothers are very good with the grill and my sisters-in-law are excellent cooks.

I'm not certain exactly what others will be bringing to our picnic/party tomorrow, but I have just finished making a pan of brownies and some chicken salad (made with chopped chicken, chopped shallots, slivered almonds, and enough mayo to hold it all together; it goes very nicely sandwiched on split baguettes and accompanied by red grapes--which I have also purchased for tomorrow--and the aforementioned brownies).

More traditional than not

Actual Fourth on Sunday:
Chilled homemade fried chicken, potato salad, pasta salad, fruit salad, lemonaid and homemade peach ice cream.

Fifth as fourth holiday on Monday:
Hamburgers and roasted corn on the cob from the grill. French fries, baked beans, homemade rootbeer and apple crisp.

Nontraditional, perhaps, but it sure sounds tasty.

We were just gonna do marinated chicken fajitas, chargrilled, and maybe some potato salad.

Now you're makin' me wanna go get tortilla chips and some hummus...

The traditional potato salad, baked beans, and cheeseburgers here. And we have leftover birthday cake from my son's birthday yesterday, so I don't have to mess with dessert.

I'd love to make fried chicken and corn-on-the-cob, but the SO refuses to eat either one. What a freak.

Upon more mature consideration I've decided to store the chicken and go to aruvqan's. I'm sure an unexpected drop-in guest she's never met before suddenly showing up for chow couldn't be much of an imposition.

LOL, we wont be home, we are going to a local state park =) half the people are there camping already=) They have a picknic pavillion space reserved that will seat 40 people and we are only 20=)

At one time in my misspent youth I worked in a kitchen...I can cook for 1 or 50, but sort of have trouble cooking for 3 or 4....I have some recipes that make sauces in gallons...and just don't like being proportioned down=\ and some of my recipes make for 250 people....though I can cook 4 different 'menus' for 4 people if I am at home and can access my kitchen almost as easily as some people make 1 menu for 4 people=) one of the sort of side benefits of working a hot line=)

Oostburgers! Take a hamburger patty, but it on a hard roll Add a bratwurst! Add onions, mustard, tomatos, and cheese. Also a little tabasco for good measure (most locals disagree with me on this last one).

Well, lately our tastebuds have been telling us to cut out the meat, so today we (and its pouring right now) are going to have beans, iced tea, and some pasta salad.

Hey! I don't know where you got that funny name, but I used to hang out at a bar in the UP* that served those. They called them Brown Bears. Man, I sure miss that place. And the Tabasco is a definite must-have.

My stepson's girlfriend has recently quit being a vegan and started to eat eggs and poultry, and has been craving "real turkey". So, I currently have a turkey in the oven. Later I will be making mashed 'taters, green beans, garlic bread, and homemade mac & cheese (my stepson's favorite). No low-carbers here! Tomorrow, we'll be doing the burgers and baked beans thing (but I don't eat red meat so I'll be having a turkey burger).

My contribution to the potluck was Calico Beans.

It's baked beans, butter beans and kidney beans, mixed with grilled ground beef and bacon, and baked with some onions, ketchup, brown sugar, and dry mustard.
