Each year I get invited elsewhere for Thanksgiving, so on the day itself I smoke a turkey and throw a leftover party the next day.
I’m using applewood to smoke this year. What ideas do people have for a good complimentary brine to use?

The smoke house near me has this brine recipe on their website:
That looks pretty good, thanks. You don’t happen to know what wood they use, do you?
salt, dried apples, real cider (not applejuice), a warm spice (maybe some cinnamon and or allspice), a small amount of dried chile, dried bananas, and a tiny bit of chipotle dry seasoning.
Maybe some applejack.
What sort of ratio of water to cider?
Maybe a gallon of cold water added to the heated gallon of cider, with a cup of salt, dried apples and bananasm, dried anchos and guajillos, pimenton (allspice), and dried chipotle powder… go 32 hours with a game bird. Smoke.
6 ounces of applejack.
