Has Jeopardy ever featured an answer where the question was a reference to the show itself?

I don't know, but there have been episodes of Jeopardy when the names of the categories were clearly joking references to the Saturday Night Live parody of Celebrity Jeopardy:

I couldn't say exactly when it was, maybe late 80s, but they once used the etymology of the word 'jeopardy' as the clue in Final Jeopardy. All three contestants answered correctly I think (i.e. with What is jeopardy?)

I remember that happening as well. I think it could have been early 90s, but around that time anyway.

You can try looking here (http://www.j-archive.com/), although just searching on "Jeopardy" may be pretty tough. It goes back to the 1980s.

I tried searching it for "what is jeopardy" but apparently its search engine doesn't recognize quotes meaning exact phrase...
