View Full Version : Empanadas? Share your recipe!

I've decided I'd like to make and freeze a big batch of empanadas. I could Google for recipes, but for some reason I have a hard time trusting random recipes I find online. I do, however, trust the Dope!

Please share your recipes, stories, experiences, what have you.

I'm partial to Colombian empanadas since I was born there. Unfortunately I've never cooked them myself (But you've inspired me to try this weekend!), however I've seen my grandma (who owned a restaurant in Colombia) make them many times. I'll have to ask her about them, but from what I recall:

In a large pot, boil some pork butt (or a similar pork cut), garlic, onions, cilantro, like making a pot roast along with spices - cumin, salt, pepper.

It should cook for a while so you can pull the pork apart. About half way through add some potatoes and a coupe of eggs.

When done, dice the potatoes and egg, and pull the pork. The stuffing is made up of the pork, the diced potatoes and egg, and a base of sauteed tomatoes, onions, garlic and cilantro (in olive oil).

The part I don't recall is the shell. I know it involves cornmeal. I gotta ask about that.

They sell the masa mix at the groceries around here for the dough, just add water and flatten. People tend to put almost anything inside of them. Typical is a mix of Portuguese chorize and/or hambuger with onion, garlic, peppers and/or jerk seasoning, but just about anything. Some people just wrap their leftovers in the dough.

Oh and of course you have to serve with pique!

Chopped scallions, garlic, cilantro and some vinegar. There's a spicy version but I'm not sure how that goes either :(

My daughter stopped being a vegetarian about a year ago, but when she was, she started making empanadas, and got pretty good at it.

I'll ask her to write down a couple of her favorite recipes.

Damn, I loves me some empanadas. I've only had them in restaurants, but the good ones blew my mind.

I will follow this thread looking for good recipes, and when I see the OP embrace one, I will stop by his house and eat empanadas.

What's not to love? It's like a pasty, but with filling that tastes good!

If I get a good recipe and am pleased with the results, I see no reason why you couldn't stop by. We're going to have to meet sometime!

Waaaaaaaait a minute. I loves me some pasties, and think the ones I make are pretty darn good. And I'll stack my lard and white flour crust against your masa any day!:p

Well you might as well share your pasty recipe, then!

I've eaten dozens of pasties in my time, there is nothing wrong with them, they just tend to be bland IMO.

And I have not found one empanadas recipe that calls for masa in the crust, I guess I'll have to keep looking.
