Coconut cream yogurt


I'm wanting to do a non-dairy yogurt with coconut cream. One recipe says take coconut cream, add the filling of a probiotic capsule and let it fester. I thought the probiotics you take in pill form were different from yogurt probiotics. Also, since it is non-dairy would just adding probiotics make a yogurt?

Yogurt starter culture contains the necessary bacteria strains to ferment lactose to make yogurt. Some probiotic capsules contain these strains, some don't. In general, you want to choose multi-strain probiotics that require refrigeration as these are good quality and will most likely contain the necessary strain to make yogurt.

As for coconut cream to make yogurt, I don't see why not. I know people who have used coconut milk and it turned out fine. Just be sure to add a little bit of sugar to feed the bacteria since coconut has no natural sugars, unless you're using processed coconut cream that already contains sugar.
