The lighter the better, I’d say. But wine.about.com seems to think that something mellow but stronger would work, even a fortified wine like sherry.

I’d try an Ice Wine. What the Germans call Eiswein.
Not only will it go well with white chocolate, it will tell it how marvelous it looks!
