Ok, so I’m going to be the fourth Southerner to mention catfish. I’m going to offer a second option for Arkansas - catfish with okra. Fried okra, obviously, there is no other kind of okra. And as “Arky” said, with locally grown rice. ---

Hmm - since Indiana was mentioned (I would’ve sugegste Crappie instead for the fish, what it works)… Tennessee: Mountain trout wrapped in collard greens… with a shot Gentleman Jack as the dipping sauce. It might taste awful, but would you care? 😃 Georgia: I’m thinking a thin slice of fish, wrapped in a thinner slice of peach, which is then rolled in rice. Not sure what kind of fish, but something light could well work here. ---

[These lists](http://en.wikipedia.org/wiki/List_of_U.S._state_animals) might help narrow down, especially fish or mammal. Of course some state residents would be mystified to even find out what their state animals are, while other states have them ingrained. Heh. Alabama is too cool to have the Atlantic Tarpon as their fish. It needs to be called the [Fighting](http://en.wikipedia.org/wiki/Better_Know_a_District) Tarpon! ---
