None that I’m aware of. However, Kutztown University near Reading, Pennsylvania offers an undergraduate program in German Studies that includes Pennsylvania German, and I know they do a lot of research into Amish, Mennonite, and Anabaptist culture, including language.
The reason why there aren’t Amish colleges is because they’re not required to attend school past the eighth grade, so very very few, if any, go on to high school and then college.
