Any idea why this ban doesn’t apply to liquor? It seems strange that bottles of vodka, rum, etc. can all list their proofs, but beer can’t.
Many homebrewers in Australia make gen-yoo-ine lagers, using bottom-fermenting yeast, and keeping the wort to low temperatures. I tried it a couple of times, but in Sydney, it’s only possible in the middle of winter, and the long brewing times tied up my equipment for too long. The result was quite good though.
Nevertheless, most homebrewers continue to just brew out of the can, and the yeast that comes with the can is invariable top-fermenting ale yeast which needs to be brewed at warm temperatures. This is even the case for so-called “lagers”. It means that the average thirsty bloke can be drinking his beer in front of the TV less than a month after buying the ingredients.
