I didn’t think that it fit with the rules, but it is the very best thing the Beatles did in my opinion, and I very much like a lot of their songs. If you don’t like that medley or that band, this isn’t really the place for it.
Note: The thread title seems to me to be misleading, since I interpret the OP asking for the most representative songs by these groups, which are not necessarily the best.

The Beatles: A Day In the Life. No, wait, too artsy—how about Day Tripper. Well, maybe not artsy enough—Eleanor Rigby? No, too Solo Paul. How about, uh, Ticket To Ride. Well, we’ll go with that for now; but I’m sure I’ll change my mind in a minute or two.
The Rolling Stones: Satisfaction. Not my favorite Stones song by any means (that’d be Paint It Black), but the one that “best defines/represents the group.”
The Who: Who Are You.
