Another thing to do with eggs. When I had unexpected breakfast guests, I took several left-over restaurant tamales out of the husk, carefully fork-mashed them in a big non-stick skillet with lots of melting butter. I added a dozen beaten eggs, slow cooked, turning with a silicon spatula until almost done, removed from heat, added oodles of shredded cheese, put the lid on until it melted. I served it with warm buttered flour tortillas, tortilla chips, salsa, diced green onions, sour cream. Some ate it with a fork, some made a breakfast burrito, but they all loved it. I keep a can of tamales on hand just for this type of emergency … it’s also good for supper. Sometimes I’ll open a can of tamales and freeze them individually in sandwich bags, so I can make a single portion. ---

I’ve been having a piece for breakfast, and we had leftovers for dinner the other night, and I had a meatloaf sandwich for dinner tonight. Still have plenty left.
