# Buffalo Wings

I have yet too see a buffalo with wings…Why don’t they just call them BBQ chicken wings??😕

Buffalo is a city in New York state where the modern chicken wing appetizer was perfected.

They’re named after the city of Buffalo, N.Y., where they were first popularised (supposedly).

They don’t call them barbecue chicken wings, because they’re not barbecued (slowly smoked in a hole in the ground) and they usually don’t used barbecue flavouring.

I believe the original (and IMHO, best) Buffalo wing sauce is just hot sauce (Frank’s) and butter. Wings deep fried and tossed with the sauce. Simplicity.

And from what I understand - a small bit of white vinegar. It’s the vinegar that gives the sauce its piquancy.

Frank’s Hot Sauce already has vinegar in it. (My source for that fact: the label on the bottle in my cupboard.) Would it really be necessary to add more?

The wings fall off the buffalo when they are very young. That’s why they’re so small, and that’s why you’d never see bison soar o’er the horizon.

Nah. The best thing to come out of Buffalo is the [air conditioner](http://www.buyandhold.com/bh/en/education/history/2001/williscarrier.html).

Still kinda makes you wonder why someone from Buffalo would want to invent a contraption to make things even _more_ cold. 🙂
