When I’m seasoning a dish, my question is, “Is there any reason I shouldn’t use hot sauce here?”

My MIL used to tell that “2nd bottle of Tabasco” joke, and I think it tells you how cooking has changed in the last generation, even here in the (formerly) boring midwest. I’m on my 4th bottle of hot sauce this year, but I also use fresh chiles. Hot sauce on pasta? Of course!

So, I grew some cayenne peppers, dried them and ran them through a **coffee grinder**. Added white wine vinegar and left the whole mess in a jar in the fridge. I’m debating whether to strain out the little bits of skin and seeds or not.

I dunno, but I wouldn’t mind trying your coffee!
