When I’m seasoning a dish, my question is, “Is there any reason I shouldn’t use hot sauce here?”
My MIL used to tell that “2nd bottle of Tabasco” joke, and I think it tells you how cooking has changed in the last generation, even here in the (formerly) boring midwest. I’m on my 4th bottle of hot sauce this year, but I also use fresh chiles. Hot sauce on pasta? Of course!
