It looks like I have fallen behind on the times and esp toaster “freezer” buttons. ~goes back to watching rerun of The Brady Bunch~
My toaster has a ‘frozen bread’ setting.
Maybe white bread is the worst, but wheat doesn’t seem to be immune. English muffins do OK, but perhaps I don’t leave them in the freezer as long.
You’re right about the potatoes. Potatoes & beans don’t freeze. Guess that’s why they used to have dry cellars (basements) & canned. But bread will freeze all day long (j/k, for months.) Also rice (but add water to it after it’s thawed & before you put it in the microwave.)

Do it all the time, right in the wrapper, especially when I have half a loaf of wheat and am going to use rye for lunch that week. Never a problem. Sliced bread mostly defrosts pretty quickly also.
Hint - we store the heels and and slices too smushed up for sandwiches in the freezer in bags, and pull them out to use for stuffing. The stuffing is especially good when you have a nice variety of breads in it. Not all types work though - I think sourdough is a bit sweet for good stuffing.
Another vote for double wrapping. The store bags are just too thin. Put another bag around it.
My nineteen fifty-something Sunbeam self-lowering toaster doesn’t have a frozen button, and it toasts frozen bread just fine without any adjustments.
We buy bread a couple of loaves at a time and store the extras in the freezer and the current one in the fridge. Never had anything weird happen. It lasts forever that way, too.
Plain old white bread does fine in my freezer, but I do not freeze hamburger and hotdog buns. It does something funky to the texture and makes them taste funny.
You don’t really need to do anything to thaw frozen sliced bread. Just set a couple of slices out on the cutting board and they’ll thaw just fine within minutes.
Actually, when a loaf of bread is taken out of the freezer it thaws rapidly. And there is a perfect window of about 12-16 hours after pulling it out when it has a great soft texture reminiscent of just baked bread.
Of course after that it goes downhill, and is noticeably worse and drier than never frozen.
Same with the toaster I got at Wal-Mart for five dollars in 2004.
