# Carrot/Pineapple/Coconut Recipe Needed

My mom use to make something called a ‘Hawaiian Nut Cake’ or some such a loooong time ago. It had carrot, pineapple, coconut, some other kind of nut (walnut?) and cream cheese frosting. Sound familiar? Do any of y’all have a recipe? I’ve been assigned to bring dessert to our Easterfest next weekend, and I thought it would be nice to try. If you have any clever-but-easy spring dessert ideas I’d love to hear them too.

This one’s called a Fourteen Carat Cake, but seems similar to what you’re looking for. The ingredients and type of frosting are the same.
