The checks really only matter to the payroll service -

The only reason I could think of, if it’s a payroll service with printed checks, is the pay stub attached to the checks.

The checks are just for the payroll service.

Now, sure, there could be some weird shit going on here, except -
It was only for one single month
and
That was the last month the old owner owned the business.

Thus making sure there are no outstanding checks is what makes sense.
