Chicken Chili Recipe? No whites!

I just discovered there’s video of this. Scroll across to the one of an orange sauce being poured into a pot… :confused:.

Well, I think this is one case where everyone from Texas to Cincinnati and beyond can agree that, whatever kind of bizarre stew that it, it ain’t chili. Fennel? Eggplant? Fig jam? Rice? Arugula? Pork rinds? Spaghetti sauce? And no chili powder or cumin?! What in the fuck?

I’ll post this again for the gazillionth time. It’s fast, easy and delicious.

3 boneless, skinless chicken breasts, cut into bite-sized pieces
Ancho chile powder
Ground cumin
Ground chipotle
Sweet Spanish paprika
Dried Mexican oregano
Pinch of cinnamon
olive oil
One onion, minced
One green bell pepper, minced
2-3 cloves garlic, minced
3 cans black beans, undrained
1-2 cans diced tomatoes, undrained
Hunk of bittersweet chocolate

Liberally dust the chicken with the spices, more heavily with the ancho and cumin, less so with the chipotle. Be very conservative with the cinnamon or it will take over. Heat the olive oil in a heavy pan and begin sauteing the chicken on medium-high. When all is done and removed, add a bit more oil to the pan and saute the veggies until soft. Dump in the tomatoes to deglaze the pan. At this point, you’ll want to remove it all to a larger pot. Add the beans and chicken, bring to a boil, add the chocolate, reduce to a simmer and cook for about a half hour uncovered.
