I hold mine in the traditional Japanese style, or so I have been told, but Japanese people would say I use them well even if I was sticking them in my nose like a walrus, soooo… anyway.
Both held in between thumb and forefinger, the bottom one rests on the pad of my ring finger. The top one rests on the pad of my point finger. Only the top one moves, with the pointer finger and ringer finger moving in tandem. I’m also left-handed.
I use chopsticks the way the OP describes. I either learned off the chopstick wrappers, or from a Taiwanese friend. I don’t remember. I’ve tried placing the bottom stick on my ring finger, and I always end up holding it in place with my middle finger, because it flops around.
As for metal chopsticks, Amazon has quite a few for sale, including 4 pairs for $5. I asked for some for Christmas a couple of years ago and got 30. They are great and get used for everything including stirring sticks and fishing the last cherry out of a jar.
I use my thumb and forefinger as primary stick movers rather than doing it the way the wrappers usually say to, always have. I don’t really keep open space between the chopsticks at their larger ends. I’m Japanese and Black.
