I hope everyone is patient; this will have to be done after work, instead of during my usual workhours surfing and driveby postings between crises. I may also be interviewing for a job with a HUGE increase in salary this week, so distractions abound. But it sounds like fun. ---

**Chefguy** , this is no noontime “quickie.” I want us both to turn in some knockout work. The recipes should not be gotten from any outside source and must reflect personal innovation with ingredients and flavor. Highly stylize presentations should count for extra credit. I expect this to take about one week to put together. I suggest firing the starting gun next Saturday morning (10-11) and finish the next Saturday evening (10-18). That will give you time to wade through your job interview. (Best wishes with that, incidentally.) Here’s some possible state-related ingredients: **Alaska** :[ul][li] Salmon[/li][li] Spot Prawns[/li][li] Moose[/li][li] Elk Caribou[/li][li] Fiddleheads[/li][li] Cloudberries[/li][li] Fireweed honey[/li][li] King crab[/ul][/li] **California** :[ul][li] Dugeness crab[/li][li] Neiman Schell beef[/li][li] Champagne grapes[/li][li] Goat cheese[/li][li] Grape leaves[/li][li] Rainbow trout[/li][li] Pheasant[/li][li] Artichokes[/ul][/li]Please add whatever you think might be some good candidates. From the sublime to the mundane and pointless in one swell foop. Point 1: Most of my cooking is based on recipes and ideas from outside sources, so I’m not sure what you’re after there. Point 2: Are we in danger of offending mods and posters with this? **Ike** has rightly pointed out that this is venturing into ego-boosting country and I don’t want to end up on anybody’s shit lists (any more than at present, anyway). This job thing is moving scarily fast. I’m being recruited by a corporation that has megabucks and who wants someone familiar with State Department operations. The salary could easily be six figures, plus housing, plus bennies. If that happens, you probably won’t hear from me again until about 2010. ---
