# Croque Monsieur..wow!

What have I been missing for the first 51 years of my life?! I just made and devoured my first Croque Monsieur…holy cow, those things are fantastic!

Topped with my first ever bechamel sauce; my other half, my neighbors and I have now become addicts. I cannot wait to try a Croque Madame.

Yum , yum and triple yum. I am open for other CM recipes if anyone is willing to share. 🙂

My man was completely hooked on a (Belgian) variant called the Croque Speciale-- had meaty marinara sauce atop.

A sick (good) Dutch relative is the uitsmijter: a couple of pieces of toast with a slab of ham, eggs over easy, and a layer of edam all stacked.

[David Myer’s Croque Monsieur](http://www.esquire.com/features/recipes-for-men/croquemonsieur1107) This is the recipe I followed, I did use a fontina cheese instead of the guyere, but it was gut bustingly yummy. It really is an easy and delicious sandwich.
