Inspired by [this thread](http://boards.straightdope.com/sdmb/showthread.php?threadid=161861), I was wondering why the run of the mill Orange Juice tastes kinda bitter.

Are the orange pips (seeds) removed before they pulp the orange ? How is it done ? How is the skin removed ?

Is there any “genetically modified” oranges with no seeds ?

There are naturally occurring oranges without seeds, called “navel” oranges - I have 3 trees of 'em in my back yard. They’re called “navel” because they have an area at the bottom of each orange that strikingly resembles a human belly button.

Juice oranges (usually called “Valencia” oranges) are different from navel oranges. They have a thin skin and a lot more juice in them, and frequently, seeds, although there are some seedless Valencia varieties available.

How they make orange juice.

> The fruit is then separated by size and sent to the juice extractors. Inside the extractors, before juicing, the peel is pricked to extract the oils found in the peel, then the juice is extracted.
>
> The pulpy juice next goes through a finisher (screen) where the pulp and seeds are removed, which, along with the peel, is diverted to be used for by-products, such as cattle feed. From this point, the juice may either go directly into a pasteurizer in the case of Not From Concentrate (NFC), or it goes on to the evaporators where most of the water is taken out of the juice by vacuum and heat, then chilled, to yield frozen concentrated orange juice (FCOJ). This process also strips out certain essences and oils.
