Pressed garlic, salad oil (I just use canola), and salt to dress a salad of lettuce, tomato, pasta, and walnuts. There’s a synergy there. When I saw the OP this morning I thought “you just can’t argue with walnuts in salad.”
I used to use all kinds of dressing but in the past ten years I’ve gone down to Ceasar and vinaigrette.
I make tarragon vinegar- stuff a large bottle with fresh tarragon, fill with white vinegar and wait a month.
Now use that in whatever vinaigrette recipe you like.
