Explain this sentence from Dickens

Well, it’s grilled and not fried, at least. It doesn’t seem particularly unhealthy to me, except maybe for the skin, but maybe you want the skin as you’re doing a higher fat/protein type of diet. Or you pick it off.

Anyhoo, they’ve made inroads in the American market, but they’re only in a handful of metro areas (luckily for me, Chicago is one of them.) I love that stuff!
