I ate out a couple of times last week (Indian butter chicken and garlic naan, and a Chinese banquet on another night) but managed to maintain my weight, which was unexpected. I’m currently on 57.4kg according to the gym scales and would like to be 56kg in 4 weeks, in time for my next caliper test. My favourite healthy recipe is currently:
2 chicken breasts
Leaves from a bunch of english spinach
Punnet of cherry tomatoes, halved
Large handful of basil leaves
Marinate the chicken breasts in 1 TBSP of brown sugar and 2 TBSP of balsamic vinegar for half an hour. Heat 1 TBSP of olive oil then fry chicken until brown. Remove, then cook the tomatoes until just soft. Add cooked chicken and spinach, then cook until spinach has just wilted and stir through basil. Add salt and pepper to taste.
If I’m eating after a workout I’ll add some couscous or quinoa for carby goodness. It’s supposed to feed 4, but there is just no way. My husband gets about 2/3 of the dish for dinner and I get the remaining 1/3, which (if I don’t add the extra grains) will usually leave me a little hungry so I grab some yoghurt or fruit for dessert. I recently switched from chicken thighs to breasts, and I still can’t get over how lovely chicken breasts are. So easy to cut, and not marbled with fat like thighs. However it does mean I have to be a bit more careful cooking them so they’re still tender.
I’ve continued to maintain my lifts at the gym. I think my assisted pull-ups are requiring less assistance, which makes sense since I’ve dropped a couple of kilos. I’m going to try and increase my squat at the end of this week, and my deadlift at the end of next week.
As part of a mini celebration of my weight loss so far I bought the new Moleskine Wellness journal, where you can track your diet and fitness goals. I’m a sucker for gorgeous stationary, and I love charting my progress. Plus I hear it comes with stickers! To celebrate my new journal I’m going to buy my first fountain pen (and then to celebrate my first fountain pen I’m going to buy some gorgeous ink).
