# Fried rice: Cook the egg before the rice? Or with the rice?

I make a little pit in the center of the wok-- making the rice form a circle around it. Crack the egg and let it cook and then whisk it into the rice and then serve.

Ah, I misspoke. What I meant was the rice is glutinous, and you don’t want to over-stir as to activate the starch.
