# Green Potato Chips

It’s not unusual for some potato chips to have green edges. Anyone know what this is?

Chlorophyll.  
The Master gets it wrong, then corrects himself, way back in 86:

Now it used to be that greening potatoes, and sprouting eyes produced potentially toxic levels of [solanine](http://en.wikipedia.org/wiki/Solanine), but I think farmers have moved to low-solanine cultivars over the past 40 years.
