I’d just like to say that, thanks to this thread, I can once again make a decent grilled cheese sandwich. I had no idea that the spread I was using was what was giving me such dismal results. I bought a package of real butter and it made all the difference in the world. Funny thing, I tried the butter on a piece of ordinary toast, and didn’t care for it at all. ---

I love this thread! It makes me hungry every time I see it! Early on in the thread I was a proponent of the gourmet grilled cheese sandwiches. Artisan bread, good cheese, and complimentary toppings. But this thread put the old standby in my head of white bread and American cheese - the classic original my Mom used to make. I made one of those a couple of weeks ago and man was it ever good. Crispy and gooey at the same time. For comfort food you just can’t beat it. I still prefer the gourmet, but I’m going to make the classic more often too. ---

When I was a kid there were foods that were pretty much trash. We got burgers at McDonalds, pizza at Domino’s, and tacos at Taco Bell. All foods relegated to pimply faced teenagers\* following procedures, not recipes. Grilled cheese is what we ate at home when we were in a rush. But now the trend is for real chefs to revisit these foods. There are gourmet burgers, honest to God sit down Pizza places (one local place is charging $1000 for a side of ranch dressing), and tacos that make me weep. There’s a place by my office called Torchy’s Taco’s that I’d choose as my last meal should I find myself on death row. Which of these deserves their own thread next? Who would win in the comfort food showdown? \*I was a pimply faced teenager flipping burgers at Jack in the Box ---
