Grilling pales compared to smoking

Funny I can’t find the rates for The Fields to Brooklyn.
How much does your grocer get for a rack of ribs?

Okay, now listen. You need to get a big chunk of mozzerella cheese and wrap it all up in some cheesecloth (three layers is fine) and smoke it! Mmmmmmmmmmmm. So freaking yummy on homemade pizza. Especially with a little bit of feta cheese and some slightly grilled spinach. Or on sandwiches. Turkey sandwiches with grilled onions. Or whatever. Cheddars good too. MMmmm smoked cheddar and roasted peppers on a chicken sandwich. Or melted for a dip, with peppers and thinly sliced celery.

Dammit! Now I’m hungry.

And of course I mean cold smoking it, keeping it away from the heat, but not the smoke.
