During that time period, the positions those Jewish people would have filled would be taken up by others, who would have the same likelihood of being Jewish as anyone else.

No, not necessarily. More people in a certain group in general doesn’t mean more Nobel prizes for that same specific group of people. If more Jews meant fewer Jews in the US, or stricter quotas in higher ed due to antisemitism, then there would likely be fewer Jewish laureates. Obviously it could go the other way too, but I don’t think one conclusion is more logical than the other. You conclusion is like arguing more Chinese people means more Chinese NBA basketball players.

You are assuming the chances of choosing a blue ball are equal to other colors. That’s not actually the case for a variety of reasons in this case.
