I was in Trader Joe’s yesterday and they had some [Toasted Coconut Thin](http://www.traderjoes.com/fearless-flyer/article.asp?article_id=593) cookies. They are just plain, with a good strong coconutty flavor, and as I was standing there in line, I thought they would be so good sandwiched together with some sort of filling for a reception I’m doing next Sunday. But I can’t decide what kind of filling to do. So I turn to the amazing creative cooks of the Dope to help me concoct a filling! Any ideas? ---

Making this up as I go along: 1. Get some marshmellow creme. 2. Form patties about the size of the cookies and cool them. 3. Melt some milk chocolate. 4. Dip the patties.\* 5. Make your sandwiches. \*Alternatively, you could reverse steps 4-5 and dip the whole sandwich. ---

If you’re looking for something simple, get a jar of pineapple jam and use it as the filling in some coconut cookie sandwiches. Coconut and pineapple are always a good combination. ---
