I have seen American Slicer, I don’t recall the knife steeling part, but the video was helpful.
Also good info: a forged knife is going to be better on average than a stamped knife. Henckels and Wusthof make both varieties.
Yes, but it depends. I think I would rather have a stamped knife from a reputable company, made of hig-carbon stainless, than a cheap forged knife. My Santukus, that I got for my birthday, are Hamilton Beach forged knives, and they started out sharp but faded pretty fast.
I suspect that a set of Wusthof stamped knives would be better quality.
Target has two levels of Henckels as well. The cheap ones have a flat tang sandwiched between two pieces of wood forming the handle, while on the expensive ones, the tang widens to the width of the handle. I have the cheap one and it’s worked OK for what I use it for.
