How do I cook portabello mushrooms?

This is extra-complicated, but great for company.

My wife hates most cheeses, and she abhors ricotta above all. So, this is my lasagna:

  1. Lasagna Noodles (cook 3/4 of the way, then layer in a pan with:)
  2. Tomato Sauce out of a jar (I like Barilla, personally)
  3. Slices of roasted eggplant
  4. Sauteed onions
  5. Defrosted, frozen spinach with water squeezed out and salt, pepper, and garlic added
  6. Roasted red peppers
  7. Portabella mushrooms that have been pan-fried after being marinated in garlic, balsamic vinegar, salt, pepper, basil, and a dash of honey and red wine. Slice into strips and lay them flat in the lasagna.

Alternate layers of pasta, sauace, and veggies. Bake until set and brown on top, which isn’t very long without cheese. (But this is good with cheese, too!)

Something quick, filling and tasty:
(Stem the 'shrooms)

Stuff the portobello mushroom with a bit of crab, a mild cheese such as cream cheese,white pepper,maybe a dash of Worcestershire sauce. Then grill or broil.

Stuff the mushroom with diced, sauteed eggplant, a few dried or fresh tomatoes, and gorgonzola. Grill or broil.

Stuff the portobello mushroom with herbed goat cheese, or plain goat cheese.
Grill or broil. Add fresh basil afterwards.

With all of these recipes, you might want to cover with foil the first few minutes, then uncover for the last few.
