Typically, what type of sounds are recorded live on the set vs. dubbed over in post-production? I am sure that different films use different methods, but I’m wondering if there a “standard” method that is more typical.

All sounds that happen while filming are recorded. Sounds that need to be in the scene that do not happen while filming are done in a Foley studio or other recording studio and then dubbed in.

It depends. In the Phantom Menace, I believe, all dialogue was re-recorded in ADR(additional dialogue recording). All on set dialogue was replaced except for one early line. I believe the sole on set line was in the opening scene with Ewan McGregor and Qui-Gon Jin where they are waiting for the negotiations.

In some movies, a lot more on set audio is used.
