I don't understand the demand for granite, stainless, dark sleek cabinets, and hardwood

I don’t see how stainless will ever go completely out of fashion. It takes on the hue of whatever else is in the room, and will always resemble professional equipment .

You have your reason why it will go out of fashion right there in your own post.

Anyway, there’s no need for a reason. It will go out of fashion because every style goes out of fashion when people have seen too much of it for too long a time.

The house I grew up in (built in '72), had marble floors in the foyer and a bathroom upstairs. It was hard, loud, slippery when wet, and very cold. I wouldn’t want it even if it was free! Although we had fun sliding on it in sock feet!

Not marble, something with a texture - maybe slate tile? I dunno, and this won’t be anytime soon anyway. I don’t care about cold, because I am gimpy and have to wear supportive footwear in the house anyway. I care about durability and water-resistance. I am not a fan of hardwood floors in the kitchen, and ours are completely losing the finish in front of the sink and fridge, which we will need to fix somehow one of these days anyway.
