Part of the problem is Lucas has been inconsistent about what’s ‘canon’ for Star Wars, but generally speaking Lucasfilm/arts-approved stuff is canon, so an approved game that shows beloved characters acting wildly out-of-character is a shock.
Compounding that is that the two dance-offs I’ve seen videos of take place at very serious times in the characters’ lives. On Cloud City, Lando betrays Han and aids Vader in capturing him in carbonite. It’s a terrible scene in the movie which highlights the helplessness of the hero, the cold depths of the villain, and the shame and frustration of the guy caught in between. In Jabba’s Palace, the strong female lead is held captive, forced to dress up in skimpy clothes, and possibly forced to do other things off-screen that were implied but never shown. Sad nerd fantasies aside, it’s an objectification of a confident and competent female character by a thoroughly repulsive being.
And in both cases, the gravity of the situation and plight of the hero is completely ignored for a freaking dance-off. What the hell.
That all said, for me it’s just pure cognitive dissonance. Once I got over that, I’m just putting this in the same bucket as Lego Star Wars. It’s not meant to be taken seriously, it’s not meant to be canon, it’s just a goofy game using the Star Wars brand to sell itself. If there is a difference between this and Lego Star Wars, it’s that the Lego series is an affectionate parody; it makes fun of while respecting the source. This just blatantly uses the source material without respect. But while I love Star Wars to death, it’s not sacred, and I have to admit this whole thing is funny as hell.

As a lifelong star wars fan, I have consulted the Yoda bobble-head on my desk, and he agrees with me\*: This is pure awesome, and anyone doesn’t agree needs an infusion of sense-of-humor-chlorians.
(\*I asked him if he agreed, then tapped his head and he nodded.)
This dance sequence won’t be in TESB-3D, It’s just a silly game, don’t get your gold bikini in a bunch.

I guess I might be misinterpreting this. Is this supposed to be a Star Wars game that just happens to be Kinect, or is it supposed to be a Kinect game that just happens to be Star Wars?

It’s a Star Wars game created to sell the Kinect. It’s really just a bundle of either various games or mini-games, depending on how charitable you want to be, each of which is designed to showcase the Kinect. Kind of like Wii Sports, just Star Wars-themed. Nobody’s talking about the lightsaber part of the game, since that’s what everyone expected and wanted and is having fun with (I imagine). It’s the dancing that seemingly came out of left field.
