My egg salad recipe…makes two… 4 hard boiled eggs chopped. Yes you must chop them first. a dash of vinegar two dollops of mayo a sprinkling of sugar a dash of pepper salt to taste… Mix very well but mix gently. Served toasted…no not on toast…toasted. With a big ol’ garlic dill, plain chips and a big glass of sweetened iced tea. ---

I had egg salad for dinner last night. And, coincidentally, I have 4 hardboiled eggs left over. I’m thinking about having it again tonight. That sure would be yummy. Gottta go. ---

Not me, I love Miracle Whip too!! MMmmmMMMM A sandwich just isn’t a sandwich without the tangy zip of miracle whip!! Now I have to go make my lunch for tomorrow, guess what it will be?? ---

My egg salad consists of: 12 finely chopped HB eggs (you’ll see why I use so many in a sec) 1 c. Mircle Whip (real mayo sucks!) 1/2 c. Mustard 1/2 c. Sweet Pickle Relish 4 Sweet Pickles - chopped Salt and Pepper to taste I’ll usually make 2-3 egg salad sandwiches and then, if I’m tired of egg salad I can just add a can of tuna and _viola_, tuna salad!!
