I used to manage retail at a big box store and along with it the delivery team.
It would have been a no-brainer to simply tell the customer “Sorry, we can’t fulfill that request. We can refund your purchase and you can shop somewhere else.”
I’d do it full well knowing the comapny would stand behind the call. If they didn’t the media would have a field day with it.
I’d also have no problem letting go a supervisor who did make that call. Probably with a “sorry to see you go, but that was really a bad call on your part.”

My parents eloped across the Ohio river to KY to get married.

Firing the manager who made the decision to acquiese to the racist customer seems a little harsh, but from a PR point of view for the company I suppose they wanted to make a clear statement against discrimination.
Although the temptation is strong to play with the customer’s head.

So there’s no chance the manager was concerned his driver would be facing any danger in going to an outright racists home?
Just playing devil’s advocate. The linked stories didn’t say either way - but what was the manager’s motivation? Maybe the old racist lady said she had a gun or something threatening.

In that case, you cancel the delivery, refund her money and call the police.

Yeah, if the manager thought one of his drivers wouldn’t be safe making the delivery to that address, he shouldn’t have sent any drivers. If a customer is crazy enough to shoot a delivery man just for being black, you don’t want to take the chance that they’re also crazy enough to shoot a delivery man for being left handed, or wearing a blue hat.
Also, if crazy racist lady had threatened someone with a gun, there’s no way in hell that wouldn’t have made it into the news story.
Hmmm…well, the old lady wasn’t a cop who shot the original delivery driver, nor did she claim “Religious Liberty” as her reasoning, so it’ll probably be at least a few hours until someone can come up with the prescribed tortured reasoning to defend her actions, but make no mistake - the defenders will show up!

I’ll bite. Sort of.
Given the current jurisprudence in the US, no such right exists. That’s easy.
However, I would be OK with allowing private businesses to discriminate. That is not the same as saying the lady has “a right” to a white delivery persons, but rather that the company should have a right to honor that request, or not.
That is also not to say that I think such behavior is good. I do not. I just don’t think such behavior should be illegal.
Actually I think political correctness trumps “the customer is always right”, especially for a national company. That manager was toast once he made the decision to accommodate her and that fact got onto the news.

I agree, but I wonder what would have happened had he not acquiesced, and the racist complained to the regional manager (RM). I can easily picture the RM doing the all-too-popular “make it go away” and chastising the store manager. It happens far too often. It’s possible the store manager would be in trouble even with the right decision.
I might be tempted to agree with that if the delivery was not made over roads belonging to all of us, but as the highways are paid for by everyone, there’s no justification for allowing only one race to utilize them in commerce.
If anyone thinks the, let’s call her a lady in the story in the OP will feel bad about her actions after she’s outed, then you don’t understand racism.
The proper course of action for the store manager would have been to cancel the sale, informing the racist that the store management has reserved the right to not serve her. Racists are not a protected class, even though it sure seems a fair number of them think they are.
After the firestorm subsides (ie another white cop kills another innocent black man), I’d guess that a look at the situation would show the manager was screwed, whatever he did.
Maybe he/she should have faked a heart attack and let someone below the corporate radar deal with it.
