It may not be the same as Steak Um’s but if you have a local butcher nearby, you can have them shave a steak for you. My uncle owned a butcher shop when I was a teen. When he would get short handed or busy, the family would pitch in and help out. We would partially freeze a ribeye roast and then slice it real thin on a deli slicer. It was really good stuff and cooked up quickly in a pan. (Any steak cut would work just as well, I just remember having to do it with rib roasts.)

Yeah, that is the traditional cut for Philly steaks, as well as top round, so far as I know. I would think top sirloin would work well, too.

A local grocery store near me sells thinly sliced round steak as a carne asada cut. I use this to make my own Philly cheese steak sandwiches. 3 slices of meat, a sweet onion slice, some thinly sliced peppers and a couple slices of provolone cooked for about 2 minutes then heaped on a warm hoagy roll. I just made myself hungry.

Aldi has Buona Beef Italian beef in gravy for an authentic Chicago style Italian beef sandwich, just add French bread and Aldi’s hot giardinera peppers. Buona isn’t my favorite beef stand, but it will do.

There used to be a competitor that had round slices so they fit a hamburg bun. Can’t remember the name but I like them better then Steak-ums. Pan fried until the edges start to curl, mmmmmm.

“Shaved Beef”. It makes great sandwiches, but doesn’t keep well. I made some last night, and it tasted bad after one night with the Kroger packaging in the refrigerator. Mrs. Plant (v.3.0) tells me it is shipped frozen.

I don’t get it. Hunter gatherers are often lauded for not wasting a single part of the animals they hunt, yet when someone finds a way of using all the “non prime” bits, that’s apparently disgusting!!

I’m pretty sure offal is not allowed to be sold simply as “beef.” I believe it must be muscle meat (but that may include the muscly parts of the heart – I’m not sure. The description says it’s made of the trimmings left over after processing primary cuts, so I don’t think it would include heart.)

Unfortunately they haven’t sold this sandwich in a few years now (much to my disappointment), and also they used a real piece of steak and not processed meat like Steak-ums.

They’re available at my local and the meat looks pretty processed to me. This time last year, I was cooking them on the griddle for the clown.

they used to be expensive so we just went for hot pockets instead

Best I could find was that they were eliminated from most of the locations sometime prior to 2017 but remain at a handful of locations (as of 2017). The meat is listed as Chopped Steak to make it more tender/easier to bite through which is a far cry different than emulsified scraps/trimmings.

Gyros are made from squished up meat formed into cones, and slices are carved of it for, well, gyros.
