I'm Looking For A Good Coleslaw Recipe

I like this one:
8c shredded cabbage
3 med carrots, coarsely grated
3 med Granny Smith apples, peeled, cored and coarsely grated
4 green onions, thinly sliced
2 tbsp apple cider vinegar

Dressing:
2/3 c sour cream
1/2 c mayo
1/4 frozen apple juice concentrate
2 tbsp poppy seeds

Just tried it. FANTASTIC.
The carrots really gave the color, taste, and crunch I wanted. No problems with the noodles, they get soggy after a while. Next time I’ll toss the noodle-less salad and just before I serve I’ll sprinkle the noodles.

The local mexican restaurant makes a really good slaw. I wish I could get the recipe.

I used to make a version years ago, using an electric food thing that had slicing and grating blades, but you could equally use one of those manual slide things.

Basically the cabbage, but add to that:

Thinly sliced radish, granny smith apple, red capsicum
grated carrot

juice of one orange and a little orange zest

just a touch of mayo for binding.

Came up really well.

Coarsely grated red cabbage, coarsely grated carrots (about equal amounts), salt, pepper, balsamic vinegar.

That is all. That is enough.
