It really depends on what I’m after. Breakfast tacos, scrambled. Everything else, sunny-side-up is the one true egg. ---

I’ll take over easy as long as the white is completely done; no runny egg-white on my plate, please! Runny egg-yellow is just good toast soppings. So I typically order over meadium just to be safe. ---

Eggs over easy, please. Then I can dip my toast in the yolk! If I have corned beef hash, poached eggs is the way to go. Mmmm. ---

Omelets. And, no, not scrambled eggs with mix-ins, actual omelets – folded into thirds so they have a crispy outside but soft inside. Favorite of mine is mixing a little pesto in the egg, and using Emmethaler cheese as the filling. ---

I was too harsh in my OP, I’ve decided.
