> Lots of trial and error, but yes - the Ritz crackers ground into a fine flour is the key trick! I can pretty much give you a 100% guarantee you will agree. But seriously - go ahead and use the generic brands of Ritz - no difference one iota. Saves a couple bucks.

Thanks for the recipe. I made it today with the Aldi brand Ritz-type crackers, and it turned out great! Just added a little pepper to the flour, but otherwise kept things the recipe the same. It’s a keeper.

Great to hear it worked out for you!
But they are a pain to make\* - hopefully you made an extra 2, 3 or 24 to freeze for later, as long as you have that huge mess in the kitchen while making them.
\*I was sorely tempted to make them last weekend, after mentioning it here…but then I wimped out and decided I wasn’t in the mood to pound that meat - keep the snide comments to yourselves, readers - and maybe will get the energy to make them this or next weekend.

drain and smush gently to press out the marinade from all the artichoke hearts in a couple of the little glass jars [or the honking huge one from BJs or Costco if you are having a party.] batter and deep fry.

Nobody mention making your own [egg rolls](http://chinesefood.about.com/od/dimsumeggrolls/r/eggroll.htm)?

I usually make my own filling, but mrAru has cheated and used the canned mixed oriental veggies from [?] La Choy. I prefer to make shrimp, with the precooked cocktail [60 count] shrimp, but you can use any already cooked protein. to be fairly honest about them, they are a decent proportion of veggie to fat/protein and not all that unhealthy.

[Fried tofu puffs](http://www.templeofthai.com/recipes/fried-tofu-puffs.php). Mix generic duck sauce with a bit of sriracha sauce and a bit of pineapple juice [unsweetened] as a dip.
