ICA typically has two food types and one “celebrity”. Maybe they had a last minute cancellation from Steingarten or Knowlton? As for the most annoying “celebrity” judge, I’d have to nominate Mark Ecko who “wept” at one of Bobby Flay’s dishes. Ugh.

I’ve had some well-done steaks that were almost falling off the fork, they were so tender. But some chefs have gotten the idea into their heads that well-done is supposed to be tough, so whenever someone orders well-done they start with the toughest, lowest-quality piece of meat they can find in the kitchen, that they wouldn’t even give to a dog otherwise. It’s a self-fulfilling prophecy.

I can see braised meat falling off the fork, but are you saying that a well-done grilled steak can be tender? I have never seen that. Can you say more? What cut was it, what restaurant, did they use tenderizer of some sort?
